Why a cellar log

A working cellar is a moving thing. Bottles arrive, wheels age, oils oxidise, leg ends dry. Three jobs that have to be done before every service.

Triage before service

Surface what is closest to its best-by, by aisle. Oils, cheeses, cured, dry — each rack sorted ascending by remaining weeks. A glance, before the line picks up.

Plan a tasting flight

Pick four or five batches in rotation, log a flavour note and a one-to-five score against each. The flight stays under the batch, grouped, dated, ready for the next pass.

Convert weights and volumes

Weights, volumes, portion counts — the tri-axis converter holds density and portion weight as you type, so a 19 kg drum becomes a known number of 30 ml pours.

  1. FEFO Rotation

    Add a batch — item, batch date, shelf-life weeks, lot weight, optional purchase price. The list reorders so the oldest workable lot sits at the top. Mark used to retire it.

  2. Yield Calculator

    Gross batch, trim percentage, target portion weight in. Net usable yield, per-portion cost from the input price, and the number of portions out — all without touching the cloud.

  3. Cellar Tasting Log

    Pick a stocked batch from the rotation, log a one-to-five score, leave a free-text note. Stamped with the day, grouped under the batch, newest pass at the top.

  4. kg / L / portions converter

    Tri-axis. Type weight in kilograms, volume in litres at a chosen density, or a portion count at a chosen portion weight — the other two update live.

Stewardship

FEFO — first expire, first out — is older than any kitchen software. It is the unwritten rule of the cellar floor, the reason a head chef rotates the back row to the front before the produce arrives, the reason a steward tastes the oldest oil first and decides whether it pours into service or into a vinegar jar.

The Mediterranean pantry has long-arc goods. A drum of cold-pressed oil holds for one season, a wax-coated wheel grows in flavour for many, a leg cures by months. Without a log the oldest lot drifts to the back of the rack and is forgotten until it tips past useful. With a log it is found, tasted, plated, retired, in that order.

Pelkan Cellar is built for the page where the chef's clipboard would have been — a pocket book that holds the rack, the dates, the weights, the tasting score. Nothing leaves the device. Nothing arrives by push. The cellar stays closed, and the rotation keeps moving.
